Strawberry Spritz

- 1 cup (250ml) chilled H by Haselgrove Sparkling Brut
- Sliced Strawberries, to serve
- Fresh Mint to serve - optional
Strawberry Puree
- 250g strawberries, halved
- 1/4 cup (55g) caster sugar
- 1 tbs fresh lemon juice
Method:
- To make strawberry puree, place in a blender strawberries, sugar and lemon juice. Blend until smooth. Strain the strawberry mixture though a fine sieve into a bowl or jug.
- Divide 1/4 cup (60ml) strawberry puree among 2 chilled coupe or champagne glasses. Top with half the Brut (wine) and using a long spoon or straw, gently stir to combine. Top with remaining wine and garnish with sliced strawberries and mint. Serve Immediately.
MILLI'S TIP:
Store leftover puree in a sealed container in the fridge or freezer. Serve over yogurt or ice-cream, or add to a Gin cocktail mix.
