Tasting Notes:
Concentrated flavours of plum, mulberry and red currant combine with rich cherry and savoury spice. 20 months in French oak imparts cedar and vanilla. A powerful
wine with luscious and assertive tannins, generous fruit and a persistent finish.
Winemaking:
De-stemmed into open fermenters as whole berries. Plunged 3 times daily for
12 days, then pressed to finish fermentation and undergo malolactic fermentation in barrel (new & seasoned French oak). Batches are kept separate until blending after 12 months.
