The Celts believed Hazel to have protective powers. If you wore a badge of Hazel you would be protected from evil spirits, sea captains would wear twigs of Hazel woven in their hats to protect themselves from the wickedness of the sea. Irish Mythical Legend Finn McCool used a shield made from Hazel to protect him. Cabernet Sauvignon’s high tannin content symbolises this protection by protecting the wine during the ageing process.

Tasting Notes:
Classic varietal McLaren Vale Cabernet displaying concentrated dark fruits, blackcurrant, mulberry and blueberry, with hints of dried herbs and underlying oak.
Powerful and full-bodied yet elegant, with dark plum, cassis and sour cherry notes. Integrated French oak and seductive youthful tannins are a perfect frame, providing a firm structure built for ageing.
Vineyards:
Selected from two distinct vineyard sites in McLaren Vale. The first from Blewitt Springs produces structural wines with brighter fruit, perfumed aromatics and leafy varietal characters. The second from Aldinga produces richer more powerful wines with dense varietal characters of cassis and dark plum.
Winemaking:
De-stemmed into open fermenters as whole berries with a 3-day cold soak. Plunged 3 x day for 9 days on skins then pressed off to complete malo-lactic ferment in barrel.
Vineyard Batches are kept separate until blending after 16 months of maturation.
Oak:
16 months in new & seasoned French oak.

I bought this wine to cellar for 3 or more years. It drinks well now but I just know it will age beautifully, if I can resist the urge to enjoy it sooner. If it ages as well as the 2013 and 2014 vintages it will be a knockout.
As good as any Cab Sav that I have had. Paired it with roast lamb. Great match.
So happy to find this wine! I struggle with drinking Cab Sav's and was hesitant to try this one in the cellar door. However, upon trying, found it to be incredible smooth and approachable.
