Tasting Notes:
Deep and alluring, displaying aromas of ripe red fruits, with hints of dried herb and savoury spice.
Generous yet structural, with dark cherry and mulberry flavours, hints of dark chocolate and cedar. A superbly balanced wine with ripe yet supple tannins.
Winemaking:
De-stemmed into open fermenters as whole berries. Plunged 3 times daily for 12 days, then pressed to finish fermentation and undergo malolactic fermentation in barrel (new & seasoned French oak). Batches are kept separate until blending after 20 months.
